In the beginning was the Lambic: this unique beer brewed on the basis of 30% wheat for more than two centuries by the Timmermans Brewery in Itterbeek, one of the very last still in business.
Originally, a miracle: microorganisms in the Senne Valley air got into the wort and provoked spontaneous fermentation. That's why a true lambic is brewed only within a 15km radius of Brussels: in the Pajottenland. The Timmermans lambic is a real jewel of the land of beer. To be drunk between 5° and 7°C.
